The word "Paturi" means leaf, in Bengali. Generally we Bengalis make paturi using Ilish (hilsa fish), Bhetki (Barramundi fish) and chingri (prawn).
Instructions to make Chicken paturi:
- Lightly roast the banana leaf on hot tawa.
- Marinate the chicken pieces with salt, turmeric powder, 2-3 tbsp mustard oil, mustard paste, poppy seed paste, grated coconut paste. Leave for 1 hr.
- Take some marinated chicken on the middle of each banana leaf piece. Put 2 tbsp mustard oil, 2-3 slitted green chillies and some chopped coriander leaves.
- Wrapped the chicken by folding the banana leaf from all side and tired it with thread to secure it.
- Heat a tawa. Drizzle some oil on it. Put the banana leaf wrapped chicken and fry both sides till brownish black with lid.
- Serve chicken paturi with hot steam rice.
